I have eaten many good tacos in my lifetime, but this beet and feta cheese taco with tomatillo salsa and a bunch of other deliciousness is very special. What make them special are the fresh ingredients used. To start, the beets are fresh without pesticides, sweet and nicely baked with salt, black pepper and a few tablespoons of honey. For the feta cheese I took a ride to Titan a Greek specialty store in Astoria, Queens which sells incredible fresh feta cheese from Greece. In this store you can find more than ten varieties of feta cheeses plus a wide range of Greek products. And while I was there I picked up two nice containers of their delicious varieties of olives.
A good taco usually starts with fresh tortillas; I prefer corn tortillas, but you can use flour too (I used store bought tortillas, but if you know how to make them from scratch and you have the time by all means I encourage you to make them as homemade is always better). For our tacos the garnishing ingredients starts with the roasted beets, feta cheese, avocado, cilantro, olives, onions, and tomatillo salsa. Of course you can add or leave out as you like, but do not leave out the beets or the feta cheese; really these two ingredients together are dynamic in a delicious way.
These tacos have become a staple lunch or dinner at my house.
What I like about tacos is that you combine a good assortment of ingredients into a few simple tortillas and you end up having an awesome meal – – simply good and without much fuss. Another good thing is that tacos can be made nutritious, light and healthy.
If you cannot get to a green market to buy your beets or a specialty Greek store to find fresh feta cheese then go to your local supermarket. Add all of the above and you will still end up with a good taco anyway. As I always say the magic of a recipe deeply depends on the mastering of the ingredients and how you combine them; know your ingredient and half of the battle is won.

- 8-9 beets (or as many you have on hand)
- Olive oil
- 1-2 tablespoons honey
- Salt and fresh ground black pepper
- 1 cup water
- Feta cheese
- Fresh cilantro
- Onions cut in julienne
- Tomatillo salsa
Preheat oven to 375 degrees F.
After trimming and cleaning the beets place them on a baking sheet; toss with salt, fresh ground black pepper, olive oil, honey and add the water. Roast for about 1 hour, turning occasionally or cook until the beets are tender.
Remove from the oven and let them cool down. Peel and slice beets and start making your tacos. Bon appetit!
