My Mexican friend and neighbor served this delicious Tomatillo salsa at her house a while ago. I have been making a batch of this tasty salsa each week. This salsa is wonderful with most tacos, grilled fish, roasted pork, pork chops, beans, rice or over any other grain. You can also uses it in eggs, tortillas chips or eat it alone as I do just because it is so good.
To make it is easy, it only takes 5 to 7 minutes; you will need fresh tomatillos about three or four, two or three jalapeños seeded, salt, pepper, one or two garlic cloves and a touch of your favorite spice. I normally add a little bit of cumin and a hand full of cilantro just because I like it, but the salsa is great alone.
The flavor on this sauce is very sharp, tasty and very attractive to the palate. And it looks gorgeous which is even better as we first experience taste with our eyes. This Christmas enjoy this delicious salsa with my roasted pork Dominican style or with my Momofuku’s Bo Ssam recipes.

- 4 green tomatillos
- 3 jalapeños, seeded and deveined (for a little bit of heat leave some seeds or veins)
- Salt and black fresh ground pepper
- 1-2 garlic cloves (optional)
- 1 teaspoon cumin (optional)
- 1 hand full cilantro (optional)
- Chopped white onions (optional)
Blanch the tomatillos and jalapeños for about 4 minutes.
Get rid of the seeds and veins on the jalapeños (leave some of the seeds if you like it with a little heat, the most seeds and veins you leave the hottest it will be).
Add the cumin and cilantro. Puree everything or pulse in a blender or food processor. Season with salt and black pepper and garnish with white chopped onions (optional).
