Who doesn’t love deviled eggs or hard cooked eggs? They go well with everything no matter what flavors you add to them. Easy to make, boil and cut them to get the yolks out and mix it with anything. The perfect holiday Easter hors d’oeuvres. This coming Easter I invite you to try this unique version with my personal twist on the traditional.
I have to say that I am addicted to eggs, I eat them on any form and these devilled eggs are filled with one of my most favorite things, hummus; a creamery mixture of, egg yolks, garbanzos, garlic, chipotle sauce, tahini, lemon, olive oil and chives. These hummus devilled eggs with salsa verde are the perfect snacks – they are very rich in protein, filling, low in calories and yeah low in carbs. I cannot stop eating them neither, will you? Enjoy!
- 6-8 organic eggs
- For the Hummus:
- 1 can chickpeas, rinsed
- 2 garlic cloves, whole
- 2 tablespoons chipotle in adobo
- ¼ cup Tahini
- 1 Lime or lemon juice
- ¼ cup Olive oil
- 2 tablespoons chives, more for garnishing
- 6-8 Egg yolks
- Kosher salt and fresh ground black pepper, to taste
- For the salsa verde: optional
- 1 cup arugula
- 1 cup cilantro
- ¼ cup olive oil
- 1 garlic clove
- 3 tablespoons mayonnaise
- Kosher salt and fresh ground black pepper
Place eggs in a single layer in a saucepan and cover with enough water. Bring to a boil then simmer for 8-10 minutes. Remove from heat and chock in cold water. Let it cool down completely before peeling. Under cool water carefully peel eggs and dry with paper towels.
Slice the eggs in half lengthwise, removing yolks. Reserve the yolks for the hummus. Place the half whites in a serving platter until needed.
For the Hummus:
In a food processor place the chickpeas, whole garlic, chipotle sauce, tahini, lime juice, olive oil, chives, egg yolks, salt and black pepper. Mix well until everything is incorporated and smooth. Taste and adjust seasoning. Pipe or spoon mixture into the whites; garnish with chives and the salsa verde.
For the salsa verde:
Place old the listed ingredients in a blender or a nutribullet and blend everything together. Serve with devilled eggs (optional)
