It's shocking how delicious this is. I made a similar version for the first time a few months ago and my husband was blown away by it's yumminess. I used green and red cabbage quarters intermixed, melted butter, S&P and Herbs de Provence. Heavenly. The other night it was last minute so I did plain green with apple slices steamed. Who knew that cabbage would be so delicious?

After 45 minutes at 400 degrees, I break the wedges up and stir things around a little. I continue roasting another 10 minutes, stir things all up and then roast another 10 minutes. This way I get blackened parts of cabbage hat seriously taste like MARSHMALLOWS. And the bacon--is just a TREAT 😉

We cooked them two ways. One was wrapped in foil which kept the cabbage moist. The other was thrown right on the grill over the coals. The cabbage dried out more, but not too much, and picked up some of the smoke flavor. My wife liked the foil-wrapped better; I liked the other one better.

It gives the cabbage those great grill marks and tastes delicious!
