Oats and wheat were still bound into sheaves and hand stooked back then on small farms in the east of England and it was hard, hot work. Earlier at hay time it was lemon barley water - hay was cut before raspberries were ripe I guess. I've never had a recipe - just layer up raspberries, sugar and acv until the jar is full. I use my grandmother's big glass sweet jars which have glass or plastic lids and date back to the thirties - I guess they hold a gallon or so each. I make drinking vinegars with most fruit but like to make them single fruit flavours and blend them if I'm bottling. Mostly we just pour the vinegar off the fruit as we use it - I don't bother to bottle it. When I strain the last dregs of a batch I've been working through for years what remains at the bottom of the jar is pretty much balsamic vinegar. Sugar extracts a purer flavour than honey, though I often add honey when we are drinking it

Never mind! I just read the recipe more thoroughly and realize I was not supposed to add the honey until after the vinegar ferments. I guess I’ll have to toss mine and start over. ?
