After fermentation, use an immersion blender to puree the mixture. This makes a fantastic flavoring to add for F2 kombucha! I like to add approximately 2TBS per 16 oz bottle.

Wonderful flavors! After fermenting I added some cinnamon and pear sauce, blended the mixture with an immersion blender and it made a great Thanksgiving /Christmas sauce (think apple butter but with cranberries). I had some leftover and used it for Kombucha flavoring.

I made the first batch as per your recipe. After we finished eating it ,I was planning on batch number two with lemon. The first one was so good that I used orange again. LOL .Maybe the next time I will try lemon. I saved the honey to use as a sweetener in other things. It is great in hot tea ( not with milk , it will curdle due to the citrus)

I tweaked your recipe just a bit - rather than piercing each berry one-by-one, I ran them all through my Universal #0 with the coarsest blade which opened them up nicely while retaining a nice coarse texture ; also, I made the honey 'runny' with a splash of Ginger Bug which may have also served as a bit of a 'starter.' Thanks for expanding my repertoire of ferments !
