If you see mold, it is bad and you shouldn't drink it. Did you use a starter? The starter helps to ensure there's enough wild yeast and bacteria for proper fermentation.

I made it to the bottling stage - not sure how fermented it’s supposed to be after day two but I decided to proceed. As I went to bottle the liquid, I noticed a thin kind of gloopy bit floating at the top of the jar, I figure a by product of the sourdough starter. Was this meant to be mixed in and included in the bottles? I didn’t, because I wasn’t sure if it was necessary or not. Looking forward to seeing how this turns out!

Adding one small apple should work, and you can certainly try a cinnamon stick. I'd avoid ground cinnamon because you'll likely see a lot of sediment.
