{"id":11569,"date":"2013-01-15T15:42:41","date_gmt":"2013-01-15T23:42:41","guid":{"rendered":"https:\/\/nourishedkitchen.com\/?p=11569"},"modified":"2024-09-17T12:45:23","modified_gmt":"2024-09-17T19:45:23","slug":"sweet-risotto","status":"publish","type":"post","link":"https:\/\/nourishedkitchen.com\/sweet-risotto\/","title":{"rendered":"Sweet Risotto with Buttermilk and Sultanas"},"content":{"rendered":"\n<p>Sweet risotto&nbsp;reminds me of my grandmother, and her closely-guarded recipe for rice pudding. &nbsp;I don't remember much about my grandmother's kitchen, only a tiny table, a white stove, real New York frankfurters cooked in mustard water, a crystal candy jar full of Jolly Ranchers, and her rice pudding.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><a href=\"https:\/\/nourishedkitchen.com\/wp-content\/uploads\/2012\/12\/sweet-risotto-spoon-horizontal-1-of-1.jpg\"><img decoding=\"async\" fetchpriority=\"high\" src=\"https:\/\/nourishedkitchen.com\/wp-content\/uploads\/2012\/12\/sweet-risotto-spoon-horizontal-1-of-1-660x437.jpg\" alt=\"sweet risotto spoon horizontal (1 of 1)\" data-skip-lazy class=\"wp-image-11573\"\/><\/a><\/figure>\n<\/div>\n\n\n<p>She guarded her recipes. &nbsp;After years of marriage to my father, my mother finally proved her worth and eked out my grandmother's recipe for rice pudding, though I'm not entirely convinced my grandmother included all the ingredients on that little slip of paper she handed my mother. While I don't have her recipe, and certainly wouldn't publish it here lest I bring down her fury from the grave, I thought I'd share with you my favorite recipe which is less a rice pudding than it is a <strong>sweet risotto<\/strong>, flavored with cardamom and vanilla, and spiked with the pleasant sourness of cultured buttermilk.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-cultured-buttermilk-for-sweet-risotto\">Cultured Buttermilk for Sweet Risotto<\/h2>\n\n\n\n<p>For this sweet risotto, I combine cultured buttermilk with whole milk which produces an extraordinarily creamy, but slightly tart dessert. The buttermilk pairs well with the rice and its abrupt tartness is softened by the use of honey and fresh orange juice.You can use store-bought buttermilk, but it often contains additives; I favor making buttermilk at home as it's impossibly easy. \u00a0<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><img decoding=\"async\" width=\"660\" height=\"498\"
