{"id":12070,"date":"2013-07-08T20:16:38","date_gmt":"2013-07-09T03:16:38","guid":{"rendered":"https:\/\/nourishedkitchen.com\/?p=12070"},"modified":"2025-07-31T18:03:49","modified_gmt":"2025-08-01T01:03:49","slug":"rhubarb-skillet-cake-with-jaggery-crumb","status":"publish","type":"post","link":"https:\/\/nourishedkitchen.com\/rhubarb-skillet-cake-with-jaggery-crumb\/","title":{"rendered":"Rhubarb Skillet Cake with Jaggery Crumb"},"content":{"rendered":"\n<p><em>Red-streaked stalks of rhubarb appear in tight bundles in our CSA each spring, and as soon as spring fades into summer at the local farm, the rhubarb from our own garden is ready for the harvest. &nbsp;My family lives high in the mountains, where the force of summer's heat never quite reaches and we can grow cool weather crops from July through September until the snows begin again.<\/em><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"660\" height=\"996\" fetchpriority=\"high\" src=\"https:\/\/nourishedkitchen.com\/wp-content\/uploads\/2013\/07\/rhubarb-skillet-cake-skillet-vertical-7-of-7.jpg\" alt=\"Rhubarb Skillet Cake\" data-skip-lazy class=\"wp-image-12085\" srcset=\"https:\/\/nourishedkitchen.com\/wp-content\/uploads\/2013\/07\/rhubarb-skillet-cake-skillet-vertical-7-of-7.jpg 660w, https:\/\/nourishedkitchen.com\/wp-content\/uploads\/2013\/07\/rhubarb-skillet-cake-skillet-vertical-7-of-7-212x320.jpg 212w\" sizes=\"(max-width: 660px) 100vw, 660px\" \/><\/figure>\n\n\n\n<p>Rhubarb is a favorite of mine, its tartness marrying well with sweet things - strawberries, of course, but also mineral-rich brown sugars whose faint acidity provides a complement for the vegetable's natural, rounded sour notes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-making-the-cake\">Making the Cake<\/h2>\n\n\n\n<p>Skillet cakes are my favorite cakes - simple to prepare and served in an old-fashioned cast-iron skillet which is, incidentally, the most used piece of equipment in my kitchen. I start by blending freshly ground whole-grain flour with yogurt, and&nbsp;<a href=\"https:\/\/nourishedkitchen.com\/soaking-grains\/\">letting it soak<\/a>&nbsp;for a period of time, a process that not only increases the bioavailability of the minerals it contains, but that also softens the crumb delivering a delicious, light cake. &nbsp;The next day, I saute a bit of fruit (or, in this case, rhubarb) in jaggery and butter until it softens, finish off the batter, and bake. &nbsp;Impossibly easy, and impassibly delicious.<\/p>\n\n\n<div id=\"recipe\"><\/div><div for rhubarb. Working \u00bd cup at a time, beat in the batter of yogurt-soaked spelt flour.  In a separate bowl, whisk high-extraction flour with 1 teaspoon ground cinnamon, orange zest, baking soda and salt.  Working \u00bd cup at a time, beat the dry ingredients into the wet ingredients until they form a smooth batter.<\/div><\/li><li id=\"wprm-recipe-21358-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Prepare the jaggery crumb in a small to medium-sized mixing bowl.
