As a fermented drink, it's naturally rich in beneficial bacteria just like <a href=\"https:\/\/nourishedkitchen.com\/tepache\/\">tepache<\/a> and <a href=\"https:\/\/nourishedkitchen.com\/how-to-make-jun-tea\/\">beet kvass<\/a>.<\/p>\n\n\n\n<p>You can flavor the tea with fruit, juices, and herbs.  For elderberry kombucha, you flavor the tea with a syrup made with elderberries. Caloric sweeteners such as coconut sugar, maple sugar, or organic white sugar work well.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Tips for making elderberry kombucha<\/h2>\n\n\n\n<p>Making flavored kombucha relies on a two-step process. You'll first prepare a syrup, and then mix that syrup with prepared kombucha during bottling or secondary fermentation.  Primary (or first) fermentation is when you prepare your kombucha tea.   Secondary fermentation happens when you flavor and bottle your brew.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Simmer your elderberries<\/strong>. Raw elderberries are toxic and can upset your stomach.  So, simmer your berries for at least 20 minutes.  You'll neutralize the berries' toxins and release their nutrients.<\/li>\n\n\n\n<li><strong>Prepare a syrup<\/strong>. The syrup is easy to add to your kombucha and supports even flavors.<\/li>\n\n\n\n<li><strong>If you don't want to make a syrup<\/strong>, you can use a purchased elderberry syrup as long as it contains a source of sugar to feed the beneficial bacteria.<\/li>\n\n\n\n<li><strong>Make sure to stir your prepared tea very well <\/strong>to promote even carbonation.
