Their refreshing qualities soften the blow of summer's heat while also supporting hydration.<\/p>\n\n\n\n<p>While we love to eat huge slices of watermelon as desserts, there's something else I like too: watermelon salad. It's a savory-sweet combo of watermelon, salty feta cheese, chilies, fresh lime, and herbs. <\/p>\n\n\n\n<div class=\"wp-block-group is-style-group-asterisk\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"h-recipe-at-a-glance\">Recipe at a Glance<\/h2>\n\n\n\n<p>It takes <strong>less than 10 minutes<\/strong> to put the salad together.<\/p>\n\n\n\n<p>Watermelon is<strong> loaded with key fat-soluble nutrients<\/strong> (like lycopene and beta-carotene). And preparing it takes almost no effort. Because of its simplicity, you can tinker with the recipe - adding a little more of one ingredient and pulling back on others as it suits you.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Watermelon<\/strong> is the foundation. Seedless varieties work best and will save you labor, but any watermelon is fine.<\/li>\n\n\n\n<li><strong>Feta<\/strong> brings a salty, acidic edge that helps balance the watermelon's sweetness. It also lends a little protein. Cotija cheese is a good alternative, if you don't have feta.<\/li>\n\n\n\n<li><strong>Jalape\u00f1o<\/strong> lends a touch of heat. If you like spicy food, drop the jalape\u00f1o and swap in sliced haba\u00f1eros. Or skip it altogether.<\/li>\n\n\n\n<li><strong>Red onion<\/strong> adds a savory element, complementing the feta and jalape\u00f1o and balancing the melon's sweetness. White onion or green onion will also work.<\/li>\n\n\n\n<li><strong>Fresh herbs<\/strong> add a vibrant, fresh touch. It's in the same botanical family as watermelon and has a cooling flavor and pop of crunch to the salad.<\/p>\n\n\n\n<p><strong>Cherry tomatoes<\/strong> can be an excellent addition - especially Sungold tomatoes which have an umami-rich sweetness.<\/p>\n\n\n\n<p><strong>Toasted pine nuts<\/strong> are delicious, too.
